Last Minute Fudge
Fudge is one of those Christmas time goodies that I could live without. However, I know a lot of people who love fudge, and not just for Christmas. This actually works out pretty well for me. I am always struggling during the holidays to try not to over eat, especially when it comes to those Christmas time classic goodies. Since, fudge is not one of my favorites, I can safely make pan after pan of it without being tempted to eat it. I have made fudge for years the hard way, with a candy thermometer and boiling it to a certain temperature. Just last year I was given a super simple recipe by a co-worker that requires no candy thermometer. I was hooked. This has got to be the easiest way to make fudge ever. So, if you are looking to squeeze a last-minute Christmas goody into your schedule, this is it.
Last Minute Fudge
3 1/3 cups sugar
4 tablespoons butter
1 teaspoon salt
1 1/3 cup evaporated milk
Put all the ingredients into a saucepan and bring to a boil over medium heat. Boil for five minutes, stirring constantly. Remove from heat and add the ingredients listed below.
3 cups chocolate chips
3 cups mini marshmallows
2 teaspoons vanilla
1 cup chopped nuts (optional)
Stir fudge until chocolate chips and marshmallows are melted. Pour the fudge into a greased 9” x 13” pan. Keep refrigerated.
