If you haven’t planned your St. Patty’s Day meal yet, don’t worry there is still time. I’ve found a very easy crockpot corned beef and cabbage recipe. All you have to do is throw the ingredients in the crockpot St. Patty’s Day morning and it will be ready when you get home at night from all the holiday’s festivities.

I am anxious to try this recipe, as I have never made corned beef and cabbage myself, but I have always enjoyed this traditional St. Patty’s Day dish. What could be more appropriate than the traditional St. Patty’s Day meal cooked in the traditional St. Patty’s Day drink?

Crockpot Corned Beef and Cabbage With Beer

3-4 pound corned beef brisket

8-10 red potatoes quartered

1 medium onion quartered

2 bay leaves

1 cup of your favorite beer

1 small cabbage cut into wedges

Throw the potatoes, onions and bay leaf in the crockpot. Cut any excess fat off of the meat and then place the meat on top of the veggies. Place the cabbage on top of the meat and then pour the beer over the top. Place the lid on the crockpot and cook for 10 hours.
